News for the week of January 7th to the 13th:
Monday found the Granny Bakers in the Square where we spent the morning mixing up a large batch of our famous dog treats. We will be packing them up and sending them to the new group of therapy dogs in training. The 18 pups are three months old and we are sure they will enjoy the treats. Many spent the afternoon at Beauty Boutique. The ladies were treated to fresh manicures and polish color of their choice. Later it was table games. Barb showed the residents how to play double solitaire. Everyone enjoyed learning the game and would like to add it to our activity schedule.
Exercises were the order of business in the East Dining Room on Tuesday morning. Tony leads this group and always makes exercising a fun time. Bingo was on the schedule for the afternoon and all came away with bags full of treats to keep them supplied for the week. Eileen and Michelle make sure the game runs smoothly.
Pastor Hendrickson led us in our Wednesday morning church service. Everyone enjoyed his special message, and we enjoyed singing our favorite hymns. Peggy and Bob were the entertainment for the afternoon and as usual, they drew a large crowd to the Square to listen to their version of many of our favorite old time songs.
Thursday morning, residents gathered in the East Dining Room for our weekly volleyball tournament. This activity brings out our competitive side, and all agree it’s a fun way to get some exercise. The afternoon was quite “puzzling” around here, as residents gathered to put together their favorite puzzles. It’s always fun as a group, if you don’t see a piece you need, someone else will find it! Later that afternoon many gathered for our Thursday Cocktail hour. This is a great time to visit with old friends and make new ones while enjoying our favorite beverage.
The Catholics gathered on East for our Friday morning rosary group led by Loretta. Later in the Square we held Gospel Sing a Long. Kathy and Bruce lead us as we love picking out our favorite hymns to sing. Dime Bingo was the afternoon activity and many left with a little more jingle in their pockets!
As many of you know, Colfax Health & Rehab, formerly Area Nursing Home is celebrating over 50 Years of Service to the residents of Colfax and surrounding communities. In 1996, we put together a recipe book containing recipes from residents, families, friends and staff. The past few weeks, I have been including recipes from this cookbook. I hope you have enjoyed the recipes, and maybe even tried some of them. This week’s recipe is a great dish to warm you on a cold winter’s day.
This week’s recipe submitted by Mary Ellen Mathews, former Assistant Director of Nursing, current member of Board of Directors. Chili Con Carne: 1 lb. ground beef, 1 cup sliced onions, 1 tsp. sugar, 4 cups tomatoes, 1 cup tomato juice, 1 tsp. salt, ¼ tsp. ground pepper, 3 tsp. chili powder, 1 can red kidney beans, ½ to 1 cup elbow spaghetti, 1 clove garlic, and ¾ cup diced celery. Directions: In Kettle, brown ground beef until slightly brown. Add remaining ingredients and mix well. Cover and simmer for at least ½ hour or until vegetables are done. Note: May add more chili powder to taste.
